What You Need
Setting up an authentic hot pot experience at home is simpler than you think! To get started, you will just need to gather a few essential tabletop tools and basic ingredients.
🍲 The Cooking Hardware
1. Hot pot — you can purchase the pot at a Chinese grocery store or online. They are not expensive. While some restaurants offer single hot pots, most available in stores are twin-divided hot pots, allowing for two different soup bases, one on each side
2. Hot pot stove — portable gas stoves are less expensive than electric ones. Stores like Walmart, Amazon, Canadian Tire, and many Chinese grocery stores sell them.
Alternatively, if you want to skip dealing with open flames or fuel, you can find a convenient all-in-one set of hot pot and the stove sold together. It may be more economical!
3. Butane gas cartridge — if you purchase a portable gas stove, don’t forget to buy the butane gas at the store. They usually come in 3 or 4 in a pack
4. Hot pot strainers and ladles — these are must-haves to make it easy to scoop the cooked food safely out of the hot broth!
🌶️ The Flavours & Ingredients
1. Hot Pot Soup Base — Again, you can purchase them at an Asian grocery store, or grab popular authentic varieties like a savoury or spicy Haidilao broth packet online to make prep as easy as adding boiling water.
2. Condiments for Dipping Sauces — Creating a personalized sauce station is half the fun! You can mix whatever condiments you like, such as soy sauce, hoisin sauce, peanut sauce, hot sauce, vinegar, oyster sauce, sesame oil, garlic, ginger, and green onions.
The Ultimate Hot Pot Grocery List: What to Eat
Half the joy of hot pot is the massive variety of fresh ingredients you get to dip into the broth. Because everything cooks right at the table, preparation mostly consists of washing, chopping, and arranging your food on platters. Here is exactly what you need to pick up for the perfect spread:
🥩 Meats & Proteins
- Beef and Lamb — The most common meats for Chinese hot pot are beef and lamb, and they must be cut into very thin slices. Unless you are great at slicing meats, the easiest way is to purchase pre-cut hot pot meats from your local grocery store. Because they are so thin, you should only dip them in the hot pot for a few seconds until they are cooked!
- Chicken — If you prefer chicken, ensure it is sliced thinly, and make sure to cook it longer than the beef or lamb to ensure it is completely done.
- Processed Meats — Beef balls, pork balls, and sliced luncheon meat (SPAM) are also classic, delicious options that soak up the broth beautifully.
🐟 Seafood
- Fresh Seafood — Basically, any seafood would be fine! Shrimp, squid, and sliced fish fillets are fantastic, but make sure you don’t overcook them by leaving them in the hot pot for too long.
- Seafood Balls — Highly popular variations like shrimp balls, fish balls, and lobster balls are sweet, springy, and absolute crowd-pleasers.
🥬 Vegetables & Mushrooms
- Leafy Greens — Most leafy greens are perfect for soaking up the savory soup. Top choices include Napa cabbage, bok choy, and spinach.
- Root Veggies & Mushrooms — Sliced daikon radish, potatoes, lotus root, enoki mushrooms, and shiitake mushrooms are all great choices that hold up well to longer boiling times.
🥢 Tofu, Noodles, & Sides
- Tofu — Firm tofu, fried tofu puffs, or fresh bean curd sheets absorb the hot pot flavors like a sponge.
- Noodles — Finish off your meal by dropping in some vermicelli glass noodles or instant ramen to soak up the rich, concentrated broth at the very end.
- Eggs — Perfect for cracking directly into the soup or using as a silky dipping sauce ingredient.
If you crave it, add it to the hot pot and enjoy!
🍲 How to Prepare the Soup Base & Start Cooking
Preparing the broth is incredibly simple, but I have a time-saving hack that will get you eating much faster!
1. Mix the Broth: Follow the instructions on your chosen soup base package, mixing it with the required amount of water directly inside your hot pot.
2. The Pre-Heat Trick: Instead of waiting for a small tabletop burner to heat cold water, I usually heat the hot pot directly on my kitchen stove first until it reaches a rolling boil.
3. Transfer to the Table: Once it’s boiling, carefully transfer the pot over to your portable gas stove or plug in your all-in-one electric hot pot right at the dining table. This method drastically shortens the cooking time for the broth so your guests can start dipping immediately!

🦪 A Quick Twist: Baked Mussels!
Hot pot rules are meant to be broken! For our dinner, instead of dropping the fresh mussels directly into the hot pot broth, my friend decided to bake them separately in the oven. They turned out incredibly yummy and made the perfect side dish while waiting for our meats to cook. Don’t be afraid to experiment with your ingredients!
